The article deals with the analysis of literature published since the late XIX to the early XX century on the study of the plants
containing essential oils and essential oils themselves. Only in the XIX century, thanks to the work of many scientists Wallach,
Wagner, Beyer, Semmler, Perkin, Charabot and others became known compositions of essential oils, the structure and properties of
their components. Despite the remarkable work of these scientists, currently the study of essential oils has a wide range, as the
number of plants not investigated is large. Therefore, fats are obtained from their composition, the structure of which has not yet
been determined. There are about three thousand species of ether-containing plants, including about a thousand found in the flora of
our country. Especially rich in essential oils spongy (mint, lavender, slightly, shatrash (sage), rosemary, patchouli, Basil (Basil) and
tent (anise, azhgon, Basil, zere, coriander).
